Halloween Cookies from The Spunky Coconut

I’m so happy to be guest posting today. It’s such a pleasure to be here on Hip Moms Go Green!

My recipes are free of gluten and casein proteins, and are often free of all grains. I use natural alternatives to refined sugar in my cooking and baking. I frequently make recipes that are free of peanuts, soy, and eggs for my readers who have an allergy or intolerance to them. With those restrictions in mind, the list of Halloween treats you can buy is very small. But we never feel deprived! Today I’m going to share a really cute Halloween cookie that you can make with your kids. My girls and I made these this weekend, and it was so much fun.

This cookie is one of my most popular recipes. I included it in the second addition of my cookbook, The Spunky Coconut Cookbook along with about twelve other new recipes. In the cookbook this dough is used for Scandinavian Thumbprint Cookies. The Butterfly Cookie dough from my desserts cookbook would also work.

Bake at 350

Add to bowl:

1/2 cup ghee, grapeseed oil, or coconut oil, liquified
1/4 cup plus 2 tbsp honey or agave
1/2 cup applesauce (with no added sugar)
2 tbsp chia seed meal (I grind my seeds in coffee grinder or Magic Bullet. Two tbsp meal is equal to about one tbsp seeds)
1 tsp vanilla

Beat with electric mixer.

 

Add:

2/3 cup tapioca flour
2/3 cup almond meal flour (I use Bob’s Red Mill)
2/3 cup coconut flour, sifted

Beat again with electric mixer.

Roll out on unbleached parchment paper, flouring the top of the dough as needed so the rolling pin doesn’t stick.

Roll the dough one quarter to one half inch thick.

The cookie cutter kit is made so that you can lock the shapes (ghost, pumpkin, cat, owl) into the frame. However, this dough sticks to the cookie cutter when the metal cutouts are attached. It’s best to hold the tiny metal Halloween cutouts (ghost, pumpkin, cat, owl) with your fingers as a separate cookie cutter, rather than put them in the frame.

Jiggling the cookie cutters on the rolled out dough will also make it easier.

You will need one backside (without the cutout shape) and one front (with the cutout shape) for each cookie.

Gently transfer the cookies to a cookie sheet lined with unbleached parchment paper.

Bake for about 12 minutes.

Cool on wire racks.

After the cookies have cooled melt dark (dairy-free) chocolate over a double boiler. (I use Chocolove bars)

Let the melted chocolate cool so that it is slightly thick.

Use a butter knife to spread a thick layer of chocolate on the cookie.

Take a cookie with the Halloween cutout and place it on top, pressing down lightly into the chocolate.

Cool the cookies until the chocolate has hardened.

Best eaten at room temperature.

Bitter Basil Bee Cocktail

This has been one of my favorite summer cocktails. I am not really a “sweetie sweet” person so this is a refreshing drink that mixes sweet and sour to perfection in my book. Try it out while its still hot!

Shot and a half TRU Organic Gin
1 tsp. melted raw honey
2 pieces muddled basil
Organic Grapefruit juice

In a shaker add the basil and muddle. This is a process that releases the juice, oils, and flavors from the leaves by twisting a muddler onto the leaves. I prefer to do this in a shaker so that I do not have floating pieces of basil in my drink. Add the Gin, melted raw honey, and grapefruit juice. Add ice and shake vigorously.  Pour into a glass and enjoy.

Banana Ice Cream ~ Dairy Free

I am in love with my new recipe for Banana Ice Cream!  This recipe is dairy free and still creamy. All ingredients are organic.

1 can organic coconut milk
1 1/3 cup rice milk (or nut milk)
2 1/2 frozen bananas
4 pitted dates soaked in water
1 T. vanilla extract

Place all ingredients into the Vitamix (or blender) and blend until warm and smooth. Turn on your ice cream machine and pour in the mix. Serve with small slices of banana for an extra yummy taste.

Strawberry Lemonade~Packed full of nutrients!

There is nothing like a refreshing lemonade in the summertime.  My boys actually love this drink all year round.  This is a-ok with me because little do they know it is packed full of green leafy Kale.  Kale is loaded with nutrients like the best form of B vitamins, antioxidants, vitamin C, A, K, and contains ITC (isothiocyanates) among many others which aids in our detox pathways.  I always add coconut oil to my smoothies because of its antimicrobial, antioxidant, and anti-fungal healing properties.  It boost the immune system and is wonderful for the skin and hair.  Enjoy your summer with this yummy drink!

All ingredients are organic:)

2 Cups filtered water
1 T. coconut Oil
1 T. organic pure maple syrup
2 T. fresh or bottled lemon juice
1 Cup Kale or large handful
1 bag of strawberries
add a few blueberries to cut the “green” color (if it matters to your children)

Throw all ingredients into the Vitamix and blend until very smooth. You can also try variations of fruit and also spinach with it too.  Enjoy!

Banana Bread

All ingredients are organic
This is a great recipe to make with little kids. My two year old helped me bake this and had a blast. It comes out incredibly moist and is great toasted!

2c white rice flour
2t baking soda
1/4t salt
½ c Canola oil
3/4c brown sugar
2 eggs, beaten
2 ¼ c mashed bananas (I like to leave some chunks!)
1t pure vanilla extract
½ t pure almond extract

1. Preheat oven to 350°.
2. In a large bowl, sift flour, baking soda and salt together.
3. In a separate bowl, cream the oil and sugar together. Stir in eggs and bananas until blended.
4. Add vanilla and almond extracts.
5. Stir mixture until well combined.
6. Pour into greased pan.
7. Bake for 1 hour or until a toothpick inserted into the center comes out clean.
8. Cool bread in pan for 10 minutes; then turn out onto wire rack to cool completely.

Baked Cauliflower–GFCS/SF

Many people miss out on cauliflower because, like most vegetables they’ve encountered, it’s been overcooked and under seasoned. Every once in a while, I come up with a recipe that I truly adore, and this is one of them. The marriage of the white balsamic and the tarragon is absolutely amazing! Cauliflower is a cruciferous vegetable, meaning literally of the cabbage family, but for you meaning full of anti-cancer properties and loaded with vitamin C and folate. Enjoy!
(Cauliflower if also one of the easiest vegetable to puree and hide in your kids mac and cheese, tuna, etc. since it really doesn’t add any flavor.)
All ingredients are organic
Serves 4

1 large head cauliflower
4 cloves garlic, minced
1.5 T olive oil
2t dried tarragon
¼ c white balsamic vinegar
¼ c parmasian reggiano—omit for dairy free
Sea salt
1. Preheat oven to 400°.
2. Wash and separate the cauliflower into individual florets. Dry in a salad spinner.
3. Place all ingredients in large bowl and mix. I use my hands to make sure each piece of cauliflower is covered with the mixture.
4. Place all ingredients in oven safe dish and bake until a golden brown color begins to appear on the vegetables–about 25 minutes.

Goji-Kreme Crepes

Equipment:

Blender
Dehydrator

Ingredients:

Note: All ingredients are organic.

4 Bananas
½ Cup Goji Berries
1/2 Cup Raw Cashews
2 Tbsp Raw Coconut Oil
1 T Raw Honey
2 Dashes Cinnamon
¼ Cup Filtered Water
1 Pinch Salt
1 Tbsp Lemon Juice
¼ Tsp Maca
6 Strawberries

Directions:

To make crepe wrappers:

  1. Blend two bananas into a liquid, adding a small amount of water if necessary.
  2. Pour liquefied bananas onto a dehydrator sheet as you would pancake batter, into four even “cakes”.
  3. Smooth each banana cake out with a spoon or spatula, to a thickness of 1/4″.
  4. Dehydrate at 110 degrees Fahrenheit for 6-8 hours.
  5. When they are firm to the touch, carefully peel the flat banana cakes off of the dehydrator sheets.

To make Goji Kreme:

  1. Combine all ingredients (except bananas and strawberries) in blender.
  2. Blend.

To put it all together:

  1. Place the crepe wrappers on a plate
  2. Fill each wrapper with 1/3 sliced banana, 1 sliced strawberry and ¼ Cup goji kreme.
  3. Use a bit of filtered water to wet and seal the top of the filled crepe wrappers.
  4. Top with the slices of the remaining banana and strawberries.
  5. Enjoy!

Variations:

  • Use raw peanut butter and banana as a filling, and top with banana slices.
  • Use any remaining goji kreme as a wonderful fruit dip, sauce, or smoothie ingredient.

Beginning Your Raw Food Journey

Getting started with raw foods can be overwhelming if you try to learn everything overnight, and leads many people to just give up on the whole process.  Instead, I invite you to take things a little slower, and see raw foods as a more of a journey.  Here is my advice to anyone who wants to include more raw foods in their diet.

The first thing you need to do is find some staple recipes that you enjoy and feel comfortable preparing.  These days you can find recipes all over the Internet, and you can find several raw food recipe books at most bookstores.  When you find your sources, begin to bookmark and/or print/copy the recipes that look the most delicious and easy to prepare.  Begin with recipes with familiar ingredients that require equipment you already own.  This will eliminate a lot of the stress and uncertainty of trying to eat in a completely new way.

Next, you need to make some of these recipes over the course of a few weeks to find the keepers and get a sense of what you do and do not like to prepare and/or eat.  Try to end up with recipes for 2 breakfast meals, 2 entrees, 2 salad dressings, 2 desserts, 1 really great smoothie, and maybe 3 snacks that you enjoy and feel comfortable making.  I will be posting my list of staple recipes next week, including Goji-Kreme Crepes, Nori Nibbles, Lemon Vinaigrette Dressing, Chocolate Raspberry Cups, Peach Bliss Smoothie, and Banana Bites.

Finally, it will really help you if you plan and prepare ahead of time.  Lay out a menu plan for a week, including any cooked foods you will be eating.  Write down your breakfast, lunch, and dinner plans, and then what you will have available for snacks, desserts, and drinks.  Also, plan out one or two days in the week to actually shop for and prepare some of your meals and snacks ahead of time.  From your menu plan, make your weekly shopping list and buy the groceries you will need.  And above all, ENJOY yourself!  Choosing to eat vibrant, living foods should be a fun adventure, not something stressful you are forcing upon yourself.
