I love salsa of any kind and this one is a staple in my house. When I was pregnant with my boys I ate this every week. The black beans are such an amazing source of protein and fiber at 15 grams each. They are rich in antioxidants due to their vibrant color coating and contain omega 3 fatty acids too. Put the leftovers in the fridge because it is better on day two.

*all ingredients are organic
1 bag of Cascadian Farms corn thawed
1/2 can pickled jalapenos, chopped
1 small onion, diced small
1 red bell pepper, diced small
Handful of cilantro leaves, torn
1/3 cup grapeseed oil
4 T. apple cider vinegar
salt and pepper to taste

Instructions:
1. In a medium sized bowl add the drained and rinsed black beans along with the corn.
2. Add the diced onion, red bell pepper, cilantro and chopped jalapenos.
3. Add the oil, vinegar, salt and pepper.
4. Mix the contents in the bowl very well and refrigerate for at least 1 hour.
Stir and serve with your favorite Tortilla Chips.
