If you are looking for healthy chicken tenders that taste great and turn out perfect everytime…….you found it! These are just delicious and the adults love them too. I created this recipe for a Garden Party Feast using Cascadian Farm Oats & Honey Granola. Try it for your friends and family.

3 organic chicken breast, cut into 1 inch wide strips
1/2 cup brown rice flour
2 eggs
celtic sea salt
pepper
2 cups Cascadian Farm Oats & Honey Cereal
In a small bowl beat the two eggs and set aside. Take the cereal and add to your dry mixer on the Vitamix or a food processer and pulse until broken down a bit (not too much). Spread the cereal on a plate and set aside. Pour the rice flour on another plate and set aside.
Salt and pepper the chicken very well.
In an assembly line dip the chicken into the rice flour, then the egg, then roll into the granola cereal until caked on pretty thick. Place them on a sprayed baking dish and place into the oven.
Bake on 350 for 30 minutes.

Apricot Maple Dipping Sauce
4 T. Cascadian Farm Apricot Fruit Spread
4 T. Pure Grade B Maple Syrup (with no other ingredients like sugar or corn syrup)
1 T. Dijon mustard
1/2 tsp. black pepper
Whisk these ingredients in a bowl and serve. Yummy!
