Spring is in the air! What a perfect time to plan a scrumptious feast for children with food from Cascadian Farm. The star of today’s feast was definitely the Crunchy Oat and Honey Chicken Tenders with Apricot Maple Dipping Sauce. I created this recipe using Cascadian Farm Oat n’ Honey Granola cereal. I should have doubled the recipe, because the adults went nuts for them too!
I paid homage to my “Hip gluten-free mamas” with these tasty Rice Quesadillas with Potato, Peppers, Onions and Swiss Cheese using Cascadian Farm Country Style Potatoes. Delicioso!
I had to include my ever popular Black Bean Salsa for this occasion. The Cascadian Farm Organic Corn gives it that sweet and crisp perfect bite.

I am so picky about my Salsa because I grew up in Houston, Texas. When you come from Texas salsa just has to be right or it’s not even worth eating. My salsa is great and super easy to make. I make it with canned Muir Glen Organic diced tomatoes. Get the recipe for Salsa here.
Having a feast for children must come complete with a fabulous smoothie. We served one up at this party that was a sure hit. This Very Berry Coconut Smoothie with Spinach is power packed with nutrients including Cascadian Farm Frozen Harvest Berries and frozen Spinach. Bottoms up!
My favorite thing on this menu was the Blueberry Basil Lemonade. We used Cascadian Farm Lemonade concentrate for this recipe so it is super easy and delicious (have I used that word yet?).
Last but not least we had a Mixed Green Salad with Spicy Pecans topped with Oranges and Strawberries severed with a Maple Balsamic Vinegarette. I make this at home (for years) and we literally end up scraping the dough bowl for any leftover pecans.
