This is one of my favorite pasta dishes to make. It is super easy, fresh, and packed full of flavor! I make it with my favorite gluten-free pasta by Tinkyada. Enjoy!

GFSF-and CF if you omit the grated
All ingredients are organic.
1 package penne
One container cherry tomatoes, cut in half
10 basil leaves, chopped
2 T. lemon juice or juice from one lemon
2 T. Truffle oil or olive oil
1 t. red pepper flakes
1 t. celtic sea salt
(optional) grated pecorino romano
1. Cook pasta, drain, and set aside.
2. In a skillet, add the truffle oil.
3. Saute tomato, basil, red pepper flakes, salt, and lemon juice for 3-4 minutes until soft.
4. Add garlic to the skillet mix for 1-2 minutes.
5. Pour on penne, toss, and serve. Yummy!
